Edison’s Ice Cream started with a problem most families recognize. Founder Nate Frary, the company’s story page says, recognized that one of the most cherished activities for his family of five was sharing ice cream, and he understood firsthand that many people, because of dairy intolerances, could not take part in the tradition. The business was born, in the site’s words, out of a father’s desire to strengthen family bonds. The answer was small-batch ice cream built around inclusion: all 12 signature flavors, always available for scoops and pints, are marked gluten-free, and several are dairy-free, among them Lemon Bar, Mint OREO, Salted Honey and Orange-Infused Olive Oil.
From a cart to two parlors
The journey began with Edison’s Ice Cream Cart in 2024. In spring 2025 the company opened its flagship parlor inside the historic Northern Hotel at 172 N. College Ave., Unit A1, in Old Town Fort Collins, styled after 1950s parlors, and almost exactly a year later it opened a second location at 911 8th Ave. in Greeley, in the historic Salzman Shoe building. Owners Nate Frary and Krisanna McNew run both; the cart still books events.
